Easy Salsa Chicken

  Have you ever heard someone mention "man catching" about a food item? They reference it in The Princess and the Frog film, where they speak about her "man catching beignets". I think that's extremely silly to think a food item can catch a significant other...however, I'd say this chicken definitely got my husbands attention. Him and I were just getting to know one another and were spending time at one of his friends houses. Long story short, they were joking about having nothing to eat and I offered to cook something. They spoke about it like a game show where they said I'd have to use the random ingredients in the fridge and (although not random to me) I cooked up this chicken in a flash. They were blown away that I "just came up with it". It is simple and very delicious. It is the perfect taco filling, taco salad topping, or just solo. My kids now love it too, so I can vouch for it being a time tested recipe. 

Ingredients:

  • 1 12 oz jar of your favorite salsa (I use a medium roasted tomato salsa)
  • 1 Vidalia onion thinly sliced
  • 2 T olive oil
  • 1 tsp sea salt
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 2-4 chicken breasts chopped into cubes/slices

Directions:

  1. Heat up a non-stick skillet on a medium heat.
  2. Once the skillet starts to emanate heat, add in 2 T of olive oil.
  3. Add in the sliced onion and begin to cook for about 1-2 minutes. 
  4. Add in the raw chicken and stir into the onions and oil. 
  5. Sprinkle the chicken evenly with the salt, garlic powder, and cumin. 
  6. Cook chicken, stirring occasionally, for about 10 minutes making sure there looks to be no more pink in the color of it. *Take out a cube and cut it in half to test it for done-ness if needed. 
  7. Pour the salsa over top of the chicken, stir it all together, and allow to simmer for about 5 minutes. 
  8. Turn off the heat and serve however you like. I hope you love it! 
*It's really that simple and seems laughable that my husband was then so amazed by it...but I am sure am grateful it grabbed his attention. 

*Also, you can leave the onion out of this recipe if you desire, it just creates a deeper flavor when it gets all caramelized along with the chicken.
