Golden, Crisp, Oven Roasted, Fries


Ingredients:  ^serves 4

-6 large red potatoes (or 4 large russet potatoes) sliced like fries with the skin on
-1/2 Vidalia sweet onion chopped
-2 cloves of garlic diced
-2 tsp Kosher salt
-1 tsp fine black pepper (I prefer course but my kids can’t handle the heat)
-1 T Italian seasoning
-3 T olive oil approx. 🤷🏼‍♀️ (can also substitute coconut oil if you don’t mind the flavor)
-*Optional 1 tsp red pepper flakes

Directions:


  1. Pre-heat oven to 425°,
  2. In a large bowl, toss the potatoes with olive oil, and all the other ingredients. Allowing the olive oil and spices to all be saturated together. 
  3. On a lipped baking sheet pour out potato mixture. 
  4. Bake for 30 minutes stirring/tossing the potatoes half way through. This is just so they get crispy edges all the way around. Don’t worry the centers will still be light and fluffy. It's also alright to not flip them if you forget, it'll just be crispier on one side. 
*These potatoes are my go to side, I even do the same recipe with sweet potatoes, they just need a little more attention (stirring half-way through) on a lower heat (400 degrees) so that the sugars don’t burn.
