Simple, delicious, and so fresh and so clean clean... ok I'm done. Here's a tasty version of a veggie you already love, and if you don't you should still give them a try. It can be both gluten and dairy free if you switch out the soy sauce for coconut aminos. Hope you love them like my daughter does!
Ingredients:
- Roughly 4 cups or 16 oz of fresh green beans, cleaned and prepped
- 1/2 onion thinly sliced, use vidalia or red
- 1 mandarin orange zested and then juiced
- 1 T soy sauce or coconut aminos
- 2 T coconut oil
- 1 tsp salt
- 1 tsp pepper
Directions:
- In a non-stick wok or frying pan heat to medium.
- Add in coconut oil once you feel a heat rising from the pan.
- Add in onions and cook them for a couple minutes until they soften and are translucent.
- Keep the pan hot by not turning it down, and add in the green beans.
- Season green beans with salt and pepper.
- Cook the green beans for about 2 minutes before stirring them up. Repeat 2x. This is to give it a good sear.
- Add in the orange zest, the orange juice, and the soy sauce, and cover with a lid.
- Allow to steam for a couple of minutes and then stir them.
- The beans should be stiff but also charred a little on all sides. You don't want them mushy. Check with a fork for a bright green and stiff bite at the center of the bean.
- Pull off the heat and serve immediately.
*For an extra pizzaz you can top with some sliced almonds or sesame seeds.
