OK, maybe they're my favorite black beans, but once you try them you'll soon be hooked as well! They take a little extra love, but omg just talking about them makes me want a warm bowl over some jasmine rice. They are smokey, sweet, spicy, and it all melds together in a harmonious way. Bacon is a key ingredient, need I say more? Didn't think so. *Serves 6-8
Ingredients:
3 thick slices of bacon cut in half
1 T butter or ghee
2 cans of rinsed and drained black beans
1 whole chopped red or sweet onion
3 large cloves of finely chopped garlic
1 green pepper chopped
1 de-seeded chopped jalapeno
1 1/-2 cups of water (you'll see why it isn't perfectly precise)
1 T raw honey
2 tsp. smoked paprika
1 tsp. chipotle seasoning
1 tsp. chili powder
1 tsp. cumin
3 T chopped fresh cilantro (can omit if you're one of those cilantro=soap peeps)
1 tsp sea salt
Directions:
-On a medium heat, in a non-stick frying pan, add all of the half slices of bacon.
-Cook the bacon just like you would for breakfast, flipping it after a couple of minutes and removing from the pan once it starts to crisp up. *Save the bacon to add back in shortly.
-Into the bacon grease, add in the T of butter, chopped onion, and peppers. Cook till soft and slightly golden in color.
-Add in garlic and cook for 2 minutes.
-Stir everything together and add in the two cans of drained black beans.
-Add in all of the spices minus the fresh cilantro. Also add in the honey and stir everything together.
-Allow to simmer for a few minutes until the liquids start to dry up on the bottom of the pan.
-Here's where we will add in the water 1/2 cup at a time. The beans will slowly soak up everything, including all of the delicious flavors. You don't want too much liquid in there all at once.
-With the back of your spoon, lightly push down across the beans to sort of break them open. Add in another 1/2 cup of water at this point.
-Add in the bacon, and another 1/2 cup of water. Stir everything together.
-Let the beans simmer on low for about 10 minutes, they'll cook down and get even tastier. At this point after the ten minutes, you can decide whether you want an extra 1/2 cup of water. The beans shouldn't be too soupy or too paste-y like a mush. Somewhere in the middle is perfection.
-Lastly, add in your chopped fresh cilantro if you desire (you should). You could also throw on some fresh jalapeno for an extra kick.
Serve beans over rice, baked sweet potatoes, or make up some burrito bowls. They make great meal prep-bowls too. The beans still taste great a week later. Hope they become a favorite in your kitchen!
