Fresca Fried Egg Over Sweet Potato Toast

    I’ve posted my recipe for Salsa Fresca previously, it’s a simple topping that goes great with so many dishes. This is one such dish. A crispy and salty fried egg laid out on the infamous sweet potato toast then finished off with a fresh and clean flavored salsa and don't forget caramelized onions. I enjoy this a couple times a month and think it's a great breakfast for entertaining guests. It is perfect for controlling your hunger through the whole morning and makes a super quick dinner.

Ingredients: 

  • Sweet potato raw and sliced into long thin cuts about 1/4 inch thick. Try to choose one that can easily fit an egg on top. You’ll either be toasting it in the toaster like toast or searing in a small pan on both sides for an almost crust like texture. 
  • However many eggs you need depending on how many people you’re serving. Usually one fried egg is enough per toast, and it’s all I use when making it for myself. 
  • 1/4 red onion thinly sliced (1/4 of an onion sautéed per person). 
  • 1 T butter (per 1/2 a sliced onion when making more)
  • 2 T olive oil 
  • Salt and pepper to taste for seasoning the egg. 
  • 2 T salsa fresca or any salsa you have in the fridge. 

Directions: 

  1. Slice the raw sweet potatoes carefully into thin long planks. I try to choose the largest sweet potato for more toast space.  Any leftovers and you can throw them in the fridge for use up to a week. 
  2. In a frying pan heat on medium till the pan is emanating a heat above it. 
  3. Add in a slight drizzle of olive oil and lay the sweet potato toast down in the pan. Cook toast for 2 minutes on each side. Then remove and set aside. 
  4. Add 1 T of butter and 1/4 red onion sliced to the already heated pan(use per person suggestions with amount of onions and butter). It’ll take about 5 minutes of sautéing, occasionally stirring, making sure there is enough time for the onion to have a good golden color on each side. 
  5. Pull onions off and into a separate bowl or plate. 
  6. In the same pan, that’s still heated, add 2 T olive oil. Once it starts to ripple you’re ready for the egg(s). 
  7. Add your egg into the oil and turn heat down to a medium/low. 
  8. Cook for about 2-3 minutes and then carefully flip with a rubber spatula. Don’t flip until you see the bottom and edges of the egg firm and sturdy enough to get the spatula under without ripping up the egg. 
  9. Season the egg on both side with salt and pepper to taste. 
  10. Usually,  I’ll cook my egg for another minute or two but you’re the egg boss so you can determine how you want it cooked. 
   *Assembly-Place the sweet potato "toast" on the bottom, top with sauteed onions, then the fried egg, and lastly the salsa fresca mentioned above. You can choose how much you'd like of the salsa and onions, that's why I haven't given a specific amount of each. Also, if you don't have the time or my delicious salsa fresca on hand...use whatever salsa you have available.
