Turkey Sausage and Peppers

This heart warming dish is one everyone is sure to love! I like to make it while listening to Dean Martin and drinking a glass of sweet red wine. It's just so comforting and reminds me of family. This dish can easily feed 6-8 depending on portion sizes and is great for sharing! I prefer the lean turkey sausage over regular sausage because it still has a ton of flavor and none of the chewy/greasy fat (however feel free to use regular because it'll taste super delicious as well).

This meal really doesn't take long to cook yet remains like grandma's hours of home cooking recipes. You could also double the recipe and bless someone with a meal as well as feeding your own household. It is a little acidic so probably not best for new moms, but great to give to someone just moving in, a new neighbor, or someone on bed rest. Sometimes, I'll freeze half for later or to have on hand to give away if the opportunity arises. Just giving you some ideas for hospitality! Loving on others is something we could all do better (including myself). I'd have this on my list of hug meals. Hope you enjoy!




Ingredients:

1 package of lean Italian turkey sausage
1 chopped Vidalia onion
1 large diced tomato
1 chopped green pepper
1 chopped red pepper (I found this beautiful reddish-yellow one)
3 large cloves of garlic finely chopped
1 fresh sprig of rosemary leaves, stripped off of stem with stem discarded
2 T butter (or ghee)
3 T olive oil
1 tsp red pepper flakes
1 tsp sea salt
1 tsp Italian seasoning
1 tsp garlic powder
1 large can of crushed tomatoes
1 T brown sugar or brown coconut sugar (cuts acidity)
Your choice of cooked pasta to serve sauce over (I prefer Brown Rice Quinoa Pasta)

Directions:

-In a medium frying pan, heat up oil and butter together on a medium heat. 
-Once butter melts, add in onion, red pepper flakes, and rosemary leaves.
-Cook onions for a few minutes until softened.
-Add in whole sausages and sear on all sides, mixing every couple minutes not constantly. We're aiming for some color on them. 
-As soon as sausages are lightly browned on all sides, add in garlic, red peppers, green peppers, and chopped tomato.


-Season with Italian seasoning, garlic powder, and salt.
-Stir everything together and cook for about 5 minutes, until the peppers start to soften.
-Turn down heat to low/medium.
-Remove one sausage link at a time, slice into rounds, and return to the pan. They might be a tad pink in the middle, but that's OK, because they're going to simmer for long enough to have them perfectly cooked.
-Add in can of crushed tomatoes and brown sugar, stir everything together, and allow to simmer for about 10 minutes stirring occasionally. 
*Please watch for sauce spits! It hurts and can burn. Use a lid and caution if possible.* 


*Usually while I have the sauce simmering is when I start boiling the pasta. I use a gluten-free brown rice quinoa pasta from Aldi that I love. Just a tip is to cook it a minute less than the least amount of time on the back of bag. Then you're ready to serve!
*If freezing sauce, allow it to come to room temperature in pan and store in a large freezer Ziploc for up to 2 months.

Garnish with the fresh shredded Italian cheese of your choice. I'll either use Parmesan or Mozzarella. The leftovers are tasty too!
