If I close my eyes while drinking this, I can easily imagine sitting on a beach balcony, watching the waves, and tasting the salty air. The beach is one of my most favorite places, it brings me peace, warms my soul, and is where I love to connect with my family (no electronics!!!). It's cold and rainy outside so I wanted something beachy to drink. So I concocted this gem. It's light fresh and sweet. This cocktail could easily be a non-alcoholic spritz and it would be just as delicious. The special part about this drink is the strawberry, orange simple syrup. Simple syrups are super easy to make and easier to flavor in all different combinations. I have the simple syrup recipe previously posted.
Ingredients for a small pitcher (serves about 4):
1/2 cup strawberry orange simple syrup (See Strawberry Orange Simple Syrup)1 cup coconut rum
1/2 lime juiced
1 orange sliced into 6-8 slices
2 cans of lime la croix or 24 oz. of a lime flavored seltzer (unsweetened)
Directions:
-In the bottom of the pitcher whisk together simple syrup, squeezed lime juice, and rum. Really mix it well, so the simple syrup breaks down.-Add in 1 cup of ice and then the lime la croix over top.
-Stir everything together and pour in your favorite mason jar with an orange slice garnish.
*Can add another 1/2 cup of rum for a stronger drink, or omit it all together in exchange for some coconut water. My kids love it with the coconut water, seltzer, and the simple syrup. They call it their special drink.
