Easy and healthy green enchiladas






Ingredients: 
  • 1/2 package or 1cup of broccoli slaw, 
  • 8-10 corn tortillas, 
  • 1 12oz can of green enchilada sauce,
  • 8oz package of shredded cheddar cheese (can be omitted),
  • 1 cup leftover grilled or shredded chicken,
  • Garlic salt 1tsp 
  • Cumin 1tsp
  • Smoked paprika 1tsp


Directions: Pre-heat oven to 375 and grease a 9x9 dish. 
-Mix broccoli slaw, chicken, spices, 1/4 cup enchilada sauce, and 1/2 cup shredded cheese in a bowl. 
-Take your corn tortillas and place about 3T of mixture in each one. Roll and place with the seam side down. 
-Repeat till you fill up the pan.
-Pour the rest of the can of enchilada sauce over the top of all the tortillas.
-Bake for 30min. 
-Pull pan out and sprinkle the rest of the cheddar on top and put back into the oven for about another 10 minutes till the cheese is bubbly and melted. 
-Serve with sour cream and fresh cilantro if you wish🌿
