Juicy Parmesan Tarragon Chicken (Easy)

 


        I threw this recipe together the other night. I was in a hurry after my kid's karate class not wanting to make anything overly difficult. It came together so beautifully. It was comforting, received a thumbs up from every family member, and was so juicy and flavorful. I'll keep this simple because this recipe is simple. Give this tarragon Parmesan baked chicken a try for an easy weeknight meal. You won't regret it. 


Ingredients List:

  • 2-4 boneless chicken breasts
  • 2 tsp fresh chopped tarragon or 1 tsp dried 
  • 1 tsp of paprika 
  • 1 cup of grated Parmesan cheese
  • 1/2-3/4 cup of avocado oil mayo (regular is fine too)
  • Salt and pepper to taste (about 1-2 tsp of each depending on how much chicken you're cooking)
  • 2 T of butter divided into 4 chunks (or 1 chunk per breast)
  • non-stick cooking spray or a little oil for bottom of pan. 

Directions:

  1. Pre-heat oven to 400 degrees F
  2. Pre-spray lipped baking pan or pyrex with non-stick spray Just be sure whichever pan you use, it has room to catch all the juice. 
  3. Place your chicken breasts down on the baking dish. 
  4. In an even layer, spread mayo over top of the entire chicken breasts getting down around the sides too. 
  5. Season chicken with salt, pepper, paprika and tarragon.
  6. Top seasoned chicken with shredded parmesan. 
  7. Place 1 pat or chunk of the butter on top of each chicken breast. Trust the process ;) 
  8. Bake in the oven for about 30 minutes or until the internal temp of the chicken is 165 degrees F. 
  9. Allow chicken to rest for 10 minutes before cutting and serving. During this resting period you can spoon a little of the cooked juice over top of the chicken, not moving the chicken.  
  10. Slice and  place back into the sauce if you wish, I'd suggest it. Just do do carefully as the cheesy layer will move off of the chicken if not tenderly sliced.

*If you can't find tarragon or don't have it, don't fret friend. You can substitute dried basil or dried Italian seasoning instead. Happy cooking!
