Crisp Loaded Baked Potato Slices

Here is the loaded baked potato of your dreams with a crisp exterior and a fluffy center topped with all the goodness. The best part is that it's a healthier version. There is no regret after I eat one or two of these babes. They make great sides and great appetizers for a party dish. It is also a fairly easy dish to make. 

Ingredients:

  • 2-3 large russet potatoes, sliced long ways at about 1 cm thick. Think 1-2 servings per russet potato depending on the amount of slices it creates.*See photos for all you visual peeps. 
  • 3-4 T of avocado oil (or any high smoke point oil)
  • Approx. 1 cup of shredded sharp cheddar
  • 6-8 sliced and chopped green onions
  • 1/2 red onion diced
  • 1/4 cup of sour cream (I like to sub plain Greek yogurt for a healthier topping, but my family isn't as keen on it)
  • 1 T of Kosher salt
  • 1 T of garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika (can also use regular)
  • 1 tsp-T of fresh cracked black pepper 

Directions:

  1. Pre-heat oven to 425 degrees F
  2. Prepare a baking sheet with foil for easy clean-up or not if you don't want to use it. Grease with a no stick spray all over the baking sheet.
  3. In a small bowl combine all the dry spices except for the black pepper. 
  4. In a larger bowl toss the potato slices with the avocado oil and the combined dry spice mix.
  5. I usually get a little handsy and rub them all down so they are evenly coated. 
  6. Lay coated potato slices down in a flat layer on your prepared baking sheet. 
  7. Sprinkle the diced red onions over top of the potato slices. This creates something crispy to enjoy on top of your potatoes almost like the crispness of bacon but healthier. 
  8. Bake potato slices for 30-35 minutes. You can flip them half-way through the cooking time...but you don't have to if you don't mind them being a little more crisp on the bottom.   
  9. Remove from the oven and sprinkle on the cheddar evenly over all of the slices. 
  10. Once the potato slices cool a little sprinkle on the green onions and black pepper. Top with a little sour cream or Greek yogurt if you wish and you're good to go. 
~These potato slices are one of my favorite quick and easy side dishes. I think they go great with grilled meats. Get creative and top with all of your favorite things. I've even tried these with pizza toppings instead. Show me all you create, I'd love to see your ideas too!
