These happy chops come together quickly and are sure to be a seasonal favorite. The flavors sparkle and shine leaving you with that perfect after meal satisfaction. You might think the flavors of cinnamon and apple strange with pork, but let me assure you it's warming and delicious! It makes a great fall recipe. Be sure to read through the instructions a few times before making, however after that, you can have these pork chops from start to finish in 30 min.
*I prefer to use a cast iron skillet with these, but non-stick can work too.
*I learned from a couple of my fave food Instagram accounts that oiling the meat before hand instead of putting the oil in the pan helps to keep down the smoke level (but be careful to not burn your pan by leaving it on too high of a heat without anything in it. Medium heat levels are great but if it isn't cast iron it can burn faster).

Ingredients:
- 4 Thin-ish bone in pork chops
- 1 sliced red onion
- 2 chopped cloves of garlic
- 2 T soy sauce (or sub coconut aminos)
- 1 apple very thinly sliced (Honey Crisp or Macintosh are good choices here)
- 4 T butter (can sub ghee)
- 2 T Avocado oil
- 4 T My smokey BBQ seasoning mix for pork chop rub (spice rub)
- 2 T apple cider vinegar
- 1/2 tsp cinnamon
- 1/4-1/2 cup of veggie broth or water
Directions:
- Mix together the spice rub mentioned above or you can use a BBQ rub of some kind.
- Allow pork to come to room temperature and rub down both sides with a little avocado oil.
- Sprinkle an even amount of seasonings over both sides of the pork and massage in a little. *There will be a picture of this below.
- Heat up your cast iron on a medium heat. Wait till it's hot. You'll feel the heat radiating up if you carefully hover your hand over top of it. It should take a few minutes.
- Once your pan is hot carefully add in the oiled/spiced pork chops. They will sizzle and spit a little so be cautious but it shouldn't be too bad.
- Cook for about 2 minutes on each side depending on the thickness. You want a crust to form on the meat that's a golden brown color, however you do not want it to be burn't or to cook through the center. It should still be slightly pink in the middle. If you sense it burning just slide the pan off of the heat for a minute, turn the burner down a little and then put back. This step is quick, that's why I've asked you to read through the directions first. It cooks up quickly.
- As soon as you see it's golden on both sides, remove chops from the pan. I had to do this in 2 batches since I had 4 and didn't want them to cook in an over crowded pan. *Overcrowding creates excess moisture you don't want when searing meat.
- Let meat sit un-touched on the side. This will make them more tender in the end. It's ok if they cool while you're doing the next steps because you'll be throwing them back in the hot pan in the end.
- Add in 1 T of avocado oil as well as the butter to the same skillet the pork was in. It should also still be on medium heat.
- Add in the onions and cook in the butter till translucent (about 3-5 minutes).
- Add in the apples and season with 1/2 tsp cinnamon.
- Stir everything together and cook for another 3-4 minutes until the thin apples begin to soften all the way through.
- Add in the garlic and cook for 1-2 minutes more.
- Add in the Apple cider vinegar and evenly stir it in. It'll produce a very strong smell, but don't worry you've gotta trust the process. The vinegar will help you to deglaze anything off of the bottom of the pan (like any leftover yummy pork bits). Let this cook for only 1 minute.
- Add in the soy sauce or aminos and stir together with pan ingredients.
- Add in the broth and stir everything together. Allow to simmer for a couple of minutes till it just thickens a little.
- Scoop all the apples, onions, and other goodness to the side of the pan.
- Place a pork chop in the pan and push the apples and onions around it. Do this with each chop until all the pork is settled into the pan nicely with the sauce, apples, ans onions. It should smell amazing!
- Serve with you're favorite sides and enjoy the comfort of this meal with good friends and/or family.
