Un-Stuffed Cabbage Rolls

Cabbage rolls can take a lot of work and if you're like me, there have been failed attempts at the perfect, neat, little, roll. Un-stuffed cabbage rolls are not very pretty looking, but big on comfort and flavor. This is a recipe inspired by my dad and step-mom. My dad was all excited to tell me about how much he loved it over the phone. So I had to try it! Plus it's a family favorite for the taste and ease in making it. I am very blessed and grateful to have supportive parents who love to cook and give me ideas.

Ingredients:

  • 1 lb. of ground beef or ground turkey
  • 3 T of coconut oil or olive oil
  • 1 can of chopped Italian tomatoes
  • 1 chopped onion
  • 2 cloves of finely chopped garlic
  • 2 T Worcestershire sauce (most are gluten free but contain soy)
  • Half a large, thinly sliced/chopped cabbage
  • 2 Large baking potatoes (pre-cooked) and cubed
  • 4 sprigs/1 T of fresh oregano also equivalent to 1 tsp dried
  • 2 tsp sea salt
  • 1 tsp ground black pepper
  • 1 tsp onion powder
  • 1 cup of beef broth or veggie broth 
  • *Optional- 3 T butter
  • *Optional- 1 tsp red pepper flakes

Directions:

  1. In the microwave nuke a potato that has been cleaned and poked with holes for 4 minutes on each side. While this is cooking you can prep the other stuff. Like chopping the cabbage, onions, garlic, and oregano. You're welcome to par-boil or oven bake the potatoes, it just takes a little more work. 
  2. Heat up a large wok or skillet on medium heat. 
  3. Add in 1 T oil to the bottom of the pan.   
  4. Once it heats up for a minute or two add in the onions. 
  5. After the onions cook for about 2 minutes add in the ground beef or ground turkey. 
  6. Season the ground meat with half of the salt and pepper, as well as the onion powder.
  7. Cook the meat for 5-8 minutes. It should be completely browned. 
  8. Carefully, drain out the fat if using ground beef or a non-lean meat. Set meat aside out of pan. 
  9. Pour in 1-2 more tablespoons of oil. 
  10. Add in pre-cooked and cubed potatoes. Fry them for 5 minutes. 
  11. Add in the garlic to the potatoes and the red pepper flakes if you're using them.
  12. Add in the tomatoes and the broth.
  13. Season contents of pan with the remaining salt and pepper. Stir together well. 
  14. Add the ground beef back in and hit it with the Worcestershire sauce. 
  15. Once the liquid starts to bubble add in all of the cabbage and butter. 
  16. Stir everything together watching out for splatters. It will take about 10 minutes to cook down. 
  17. Keep stirring until the cabbage is all equally beginning to wilt. If it's taking too long, you can cover with a lid and allow it to steam for a couple of minutes. 
Serve in happy bowls and enjoy all the comfort! It sounds like a lot of instructions but it comes together fairly quick when you start cooking it.
