Chunky Monkey Chia Overnight Oats

   Easy overnight oats that will leave you full and not feeling like a horse who just finished eating their boring bucket of grains ;) You know what I mean, you don't want flavorless oats. To Make this allergy friendly you could easily switch out the greek yogurt to coconut "yogurt" and making sure your chocolate chips are dairy free. For peanut allergies just sub your favorite nut/seed butter. They both still taste equally delicious. I actually like a good sunflower butter paired with bananas. It's just a good combo. You also don't have to get nervous about layering because it'll taste all good when you eat it no matter the layer or mix. This is a general recipe for two servings, but usually I'll make one or two extras for the week using the same recipe and doubling it. Get creative and enjoy!

Ingredients:

  • 1 large thinly sliced banana. 1/2 of the banana per serving divided. 
  • 1/4 cup greek yogurt divided in half. 
  • 2 T of peanut butter or your fave nut butter
  • 2 tsp pure, unrefined maple syrup divided into 1/2 tsp at a time.
  • 1/4 cup of oats, sometimes I'll mix steel cut with the regular oats, but that's your call. 
  • 3 T Chia seeds 
  • 2 T of pepitas or (de-shelled) sunflower seeds
  • 1/2 tsp sea salt or kosher salt
  • 2-3 T of dark chocolate chips or chopped mini-chunks
  • 1 cup of coconut milk or almond works too
  • 2 mason jars or bowls. 

Directions:

  1. In a small bowl, mix together the oats, seeds, chia seeds, and salt.
  2. Do the following layering to the 2 jars or bowls. 
  3. Layer 3 T of the Oat mixture on the bottom of the jar.
  4. drizzle oat layer with 1/2 tsp maple syrup.
  5. Top with a thin layer of bananas.
  6. Pour 3 T of milk over top of the bananas and seeds. 
  7. Dollop 1 T of nut butter on top next. 
  8. Top with another layer of the 3 T of Oat mixture.
  9. Then a thin banana layer.
  10. Then another 3-4 T of coconut milk. Making sure the seeds are all covered up with coconut milk. 
  11. Top it all off with a dollop of greek yogurt that is drizzled with 1/2 tsp maple syrup, and a sprinkle of chocolate.  
  12. Lastly, chill overnight or for a minimum of 6 hours. If you like eating it dry, it'll still have flavor, just not as much, so enjoy how you prefer. 
*Can make ahead for up to 5 days, storing in the refrigerator, checking that your yogurt and milk expiration dates are good till then.
*Mix and match and have fun with it. Sometimes I'll switch out the bananas for raspberries or strawberries or even the peanut butter for nutella if I'm feeling a serious chocolate craving.
