Brown Butter, Lemon, Herb, and White Wine Tenderloins

  If you haven't made a brown butter sauce before, you don't know what you're missing. It's pretty simple and creates a more complex butter flavor that now has a caramelized nuttiness.  It's the perfect sauce to infuse fresh herbs into as well. All this flavor can be made in minutes by YOU. These chicken tenderloins came together in 20 minutes. You can't beat a delicious meal that is also quick to make.

Ingredients:

  • 6-8 chicken tenderloins
  • 2 T olive oil
  • 1 tsp garlic salt
  • 1 tsp Italian seasoning
  • 1 tsp onion powder
  • 3 T butter
  • 2 T fresh herbs (I used rosemary and lemon thyme)
  • 3 T white wine
  • 1/2 zested and squeezed lemon
Directions:

  1. Season raw tenderloins evenly on both sides with garlic salt, Italian seasoning, and onion powder. 
  2. Heat up a non-stick pan on a medium heat. 
  3. Once you feel heat rising up from the frying pan add in the olive oil. 
  4. Add in the seasoned chicken tenderloins. 
  5. Sprinkle with lemon zest.
  6. Cover with a lid and allow the chicken to cook for about 3-4 minutes on each side. 
  7. Remove lid carefully and squeeze the lemon juice over the chicken. 
  8. Flip chicken again and add in herbs, garlic, and butter. 
  9. Continue to flip chicken every minute or so and stir around butter underneath gently. You'll want the butter to start to turn to a golden caramel looking sheen. Do not cook longer than another minute or so because if butter turns dark brown you'll taste the burnt flavor of it. 
  10. Add in white wine and gently stir continuously. (Watch out that the alcohol burn off doesn't burn you in turn.) 
  11. Turn off the heat after another minute. 
  12. Pull pan off of the burner, cover, and allow to sit for a few minutes. *I usually choose 5 minutes. 
*Serve chicken with roasted potatoes, baked potatoes, pasta, or roasted veggies. I ate mine recently with Massaged Kale and half of a baked potato. It was easy for me, my kids enjoyed it, and I felt very satisfied. Hope you can enjoy this quick entree and serve with whatever you fancy.
