Fluffy, lightly coco-nutty, and the perfect side to pair with many different dishes. I especially love to use this rice when making stir fries. Ingredients:
- 1 1/2 cups of Jasmine rice
- 12 oz of unsweetened coconut milk
- 1 1/2 cups of filtered water
- 1 tsp fine sea salt
- 1 T butter
Directions:
- In a medium pot bring water and coconut milk to a low boil.
- Add in the butter and salt and stir together till butter is melted.
- Add in rice stirring every minute on a low boil for 5 minutes.
- Cover pot with a fitted lid, and turn heat to low.
- Cook on low for 20 minutes without opening the lid.
- Turn off the heat from the rice and allow to sit for another 5-10 minutes before removing the lid.
- Fluff rice with a fork and enjoy with your favorite stir fries!
