Easy, Fluffy, Coconut Rice

Fluffy, lightly coco-nutty, and the perfect side to pair with many different dishes. I especially love to use this rice when making stir fries. It isn't sweet but is faintly aromatic in the most perfect way. It's a tried and true recipe and hopefully you'll use it often with ease. Leave me a message with how you like it! Thank you!

Ingredients:

  • 1 1/2 cups of Jasmine rice
  • 12 oz of unsweetened coconut milk
  • 1 1/2 cups of filtered water
  • 1 tsp fine sea salt
  • 1 T butter

Directions:

  1. In a medium pot bring water and coconut milk to a low boil. 
  2. Add in the butter and salt and stir together till butter is melted.
  3. Add in rice stirring every minute on a low boil for 5 minutes. 
  4. Cover pot with a fitted lid, and turn heat to low. 
  5. Cook on low for 20 minutes without opening the lid.
  6. Turn off the heat from the rice and allow to sit for another 5-10 minutes before removing the lid. 
  7. Fluff rice with a fork and enjoy with your favorite stir fries! 
*Goes great with my stir fry veggies and grilled shrimp or chicken.  I'll double the recipe sometimes to re-use the leftover rice within the next few days to make fried rice. It's so amazing for fried rice!
