
Super easy and fresh veggie side that pairs perfectly with my favorite grilled chicken recipe (link). Makes a great easy meal prep side for the week or just whenever you see fit. I love the texture and flavor combo of the earthy green beans and sweet tomatoes. The carrots add the perfect visual color pop, and it all just balances really well. Assuming you can prep in 5 minutes and cook in 15-20 minutes, it doesn't take long to come together.
Ingredients:
About 15 Cherry tomatoes sliced in half
12 oz fresh green beans cleaned up with ends removed (dry well after washing so the oil doesn't get spittin mad)
2-3 large carrots chopped into 1 inch cubes1/2 sliced sweet onion
1 large garlic clove thinly slivered
1 tsp salt
3-4 T of olive oil
*Optional squeeze of fresh lemon juice at the end
Directions:
- In a pan on medium heat add olive oil to coat bottom of pan.
- Add sliced onions and cook till they begin to soften up.
- Next, add in green beans and carrots.
- Cook for about 5-10 minutes depending on your desired level of either al dente or softness to the veggies. (I personally like a good outer char with a firm bite in the center)
- Add in sliced tomatoes, garlic, and season with salt.
- Cook everything for another 1-2 minutes, just don't overcook or the tomatoes will be saucy and mushy.
- Turn off heat and squeeze half of a lemon over top of everything for a fresh zing.
