Easy Baked Alfredo Chicken

   When I need to fix dinner and I absolutely don't want to and I don't want to spend money on pizza (which happens fairly often) I'll make this dish. It's so easy and takes only a few ingredients. As long as you can handle all the dairy, it's pretty low on calories. I made this last week when I wanted to be outside for as long as possible. It was just so gorgeous outside! I made some roasted potatoes to go alongside of it and that was it. Everything cooked in the oven for 45 minutes and I had to do like 15 minutes of prep beforehand. This chicken is tender and good enough for my kid's shy palates. In addition, I bought these ingredients at Aldi so it's a cheaper meal. I used the leftovers in a salad the next day too. Ingredients:

  • 2 chicken breasts (these breasts were large..haha...so use 3 if the ones you get are smaller)
  • 1/2 jar or 1 1/2 cup of Alfredo sauce
  • 2 T olive oil
  • 1 can of diced/chopped tomatoes with basil
  • About 1 tsp of ground black pepper
  • 2 tsp sea salt
  • 1 tsp garlic powder
  • *Optional* A handful of fresh chopped basil leaves

Directions:

  1. Pre-heat oven to 375 degrees.
  2.  Pour olive oil in the bottom of a pyrex/glass pan.
  3. Season chicken with salt, pepper, and garlic powder on both sides. 
  4. Place seasoned chicken in the bottom of the pan.
  5. Pour Alfredo sauce over top of chicken.
  6. Drain out most of the liquid out of the can of tomatoes, leaving the tomatoes and spices in the can. Then pour the tomatoes from the can over top of the chicken with the Alfredo sauce.  
  7. Bake on 375 for 45 minutes. 
  8. When it comes out of the oven there will be a nice sauce around the chicken. Carefully, remove the chicken from said sauce (It will be hot), thinly slice and place back in pan into the sauce. 
  9. Allow to rest after slices for at least 5 minutes and enjoy! 
*After about 20 minutes of baking time you can turn the oven up to 400 if you're cooking potatoes with it. That way the heat won't get lower.
