Quick Salsa Fresca (Pico De Gallo)

My husband and I could easily eat this by the spoonful (and we do). It's super simple to make and can top off so many things! It's that perfect addition to make anything 10x more fresh tasting. My favorite foods to add it to include: fajita tacos, baked fish, plain ol tortilla chips, and most egg dishes. If you have 10 minutes you can whip this up too! Your family and friends will easily be under the guise that you're a professional in the kitchen. A lot of times it's the little fresh additions that make such a huge difference.

Ingredients:

4 diced Roma/Plum tomatoes
1/4 red onion, thinly sliced
1 large clove of garlic finely chopped
1-2 Serrano peppers chopped (can use a jalapeno but serrano's have a more even heat)
1 T olive oil
1 tsp sea salt
1 tsp chipotle seasoning 
*Optional, but highly recommended,  1/2 lime and T torn fresh cilantro

Directions:

  • In a bowl, mix together chopped tomatoes, sliced onion, garlic, peppers, chipotle seasoning and olive oil. 
  • If including, tear cilantro as small as you can and mix into bowl. 
  • Squeeze half of a lime over top of salsa and stir together.
  • Lastly, add salt right before serving. You can add it in the beginning but it will create a lot of extra liquid, so you'll have to drain a little if making ahead of time. I usually wait till right before because it only takes a second to mix in.
