I love love Larabars! I love that the seeds get stuck in my teeth (strange but true) and the happy tummy feeling after eating one. I enjoy having these available to grab before church and before heading to school drop offs. My daughter even started to request them before school too. I don't however like the price tag when I grab one from a store. So I tried my hand at my own bars. Chocolate and coconut go together so perfectly they're the E-Harmony of flavors (ha ha ha). Hope you become a coco-nut for these grab bars and make them often.
Ingredients:
1 cup pitted dates
1 cup roasted almonds
About 1/2 cup fresh, (unsweetened) coconut
1/4 cup dark dark chocolate
1 T cocoa powder
2 tsp ground flax seeds
4 tsp chia seeds
1 tsp coconut oil
1 tsp vanilla extract
*Might need an extra tsp of coconut oil or honey if using plain dried coconut instead of fresh.
*Also need a food processor or good blender for this.
Directions:
•Chop the dates, roasted almonds, dark chocolate, and coconut each separately in a food processor. You don’t have to do this, but it’s way less stress on the food processor and makes everything much more finely chopped.
•Add all ingredients together in a bowl, and mix well. I use my (very clean) hands to mix it all together and form a large ball, but a dough mixer or wooden spoon works too.
•Once dough ball forms, it should stick to itself only and not your hands. When ready add to a greased glass dish. I line mine with aluminum foil or parchment paper. Either will work.
•Chill in refrigerator for a minimum of 2 hours, best overnight, and enjoy!
