I use this silky simple syrup mostly for drink recipes (see my Florida Sunshine Cocktail recipe), but it can also be used as a pancake or waffle topping, or anything else you'd like to soak it up with. Home made lemonade goes amazingly with this syrup too. It's so easy to make! Just think of all the possibilities. I love to experiment with different simple syrups often, hope you love it!
Ingredients:
-2 cups of cane sugar-1 cup of filtered water
-1 whole navel orange zested and then juiced
- 4-6 sliced strawberries
-A handful of fresh mint or lemon balm
Directions:
-In a small sauce pan, add in all of your ingredients.-Stir everything together and then turn the pan onto a low-medium heat.
-Your goal is to keep the mixture on a low boil for about 10 minutes. It will cook down a bit into a thicker liquid.
-Keep stirring every couple minutes so to not burn any sugar on the bottom of the pan.
-You're going to want to look for a shimmering, gloss like sheen in the liquid. If using a candy thermometer, cook till it hits 210 degrees.
-After everything is thicker and nicely incorporated, turn off heat, and remove pan from burner.
-Allow to cool for 10 minutes and pour through a sifter, cheese cloth, or small holed strainer. I like to keep the zest in the simple syrup. You'll want to remove the mint leaves and fruit though, otherwise the syrup wont keep as long.
-Store in the refrigerator for up to a week. It usually fills up a mason jar about 3/4 of the way. Keep a tight lid on it. I may or may not know how annoying it is to clean up, if it happens to spill, in the fridge.
*While it's cooking you'll smell a lovely strawberry jello like aroma. It brought me back to being a kid and loving the smell of cooling jello (weirdo I know).
