Anti-pasta trays are a staple I grew up with at family occasions. I love them, they're so great for not feeling over stuffed as well as being able to move around while you eat them. Usually mom's lunch break doesn't mean I get to sit down and have a quiet break. I either blog while the kids play and eat as I type or clean up school messes while I eat. So this is great to grab and go! It's also something you can easily swap in and out items from. I try to keep all of the items below in my fridge, because they're so easy to grab for healthier snacking as well. Most of the time I find these items at #Aldi because it helps keep the grocery bill down. Below I have listed what I like to switch in and out for lunch ideas. You don't need to have a family get together to enjoy these anti-pasta-ish tray lunch ideas.
Here I have:
-Baby carrots
-Cucumber slices lightly salted with pink salt
-Dried apricot pieces
-Hot salami
-Tomato slices drizzled with a lil olive oil, salt and pepper, and fresh basil and oregano leaves from the garden
-Ham, provolone, and lettuce rolled together (can't see the lettuce very well because it's small pieces from a baby lettuce I have growing out front)
Sometimes I'll have:
-Cheese, ham, and crackers
-Celery with nut butter
-Tomatoes drizzled with olive oil with basil and mozzarella bites
-Cucumbers with feta and black pepper or cucumbers with cream cheese and smoked salmon
-Prosciutto wrapped around apple slices
-Carrots or any other veggies dipped in veggie cream cheese
-Mini-peppers filled with half a cheese stick, or rolled lunch meat, or cheese spread
-Pretzel sticks with cream cheese
-Varied nuts
-Occasionally... on that one, specific, special, week of the month I'll add strawberries or bananas with Nutella :)
-Apple or pear slices with squeezed orange or lime juice over top
-Jerky
-Salted watermelon slices
