Mighty Massaged Kale

   


   Not only is Kale a vegetable celebrity, really good for you, chocked full of vitamins, and hearty...but it can taste amazing too. Besides brussels, kale is a top fave of mine. However my heart beats for kale, I have heard a lot of people mention it's tough and bitter. If you aren't a huge fan of it, at least give this recipe a try. It's so easy and might change your mind. I eat this at least once a week for a dinner side or an easy lunch. 
*As a side dish it serves 4


Ingredients:


1/2 bag organic kale (3 overflowing cups)
2 large cloves of garlic finely chopped
1 T ghee
4 T olive oil
1/2 cup chopped pecans or walnuts
1 tsp red pepper flakes,
Approx. 1 tsp kosher salt

Directions:


-In a large glass or metal bowl add the uncooked kale. It's your prerogative whether you want to de-stem it all or not. The stems don't bother me unless they're not fork size. 
-In a small sauce pan heat up ghee and olive oil. 
-Once it's warm (not bubbling hot) add in the pecans, red pepper flakes, and garlic at the same time.
-Only cook garlic and nuts for 1-2 minutes, you're just warming and flavoring the oil. 
-Pull oil mixture off of the stove and pour over the raw kale. 
-Sprinkle with salt.
-Massaged kale literally means you are to massage it. Think of actually rubbing the oils into the leaves and incorporate throughout. I use my hands because it's easier to get the oil evenly onto the leaves but a rubber spatula would work too. 
*Watch out not to burn your hands on the oil at first. It cools quickly but just be warned. Test it out before you get your hands in there. 
-The garlic, oil, and nuts should all be evenly mixed. 

   It seriously takes ~5 minutes to make this till it's ready to enjoy. Let me know if you like it! 
*I also enjoy mixing it with some halved cherry tomatoes and grilled chicken for a stand alone dish.
