Eggs In Toast


   This is a top 5 favorite breakfast of mine! It's sooooo good. I could easily eat it day after day.  I watched a version of eggs in toast being made on buzzfeed's food instagram @buzzfeedtasty. It was a bunch of different ways to make eggs in a hole as they call it. Each way (https://www.buzzfeed.com/emofly/eggs-in-exciting-holes ) looked delish so I decided to try out my own version.

Ingredients:

1 piece of whole grain toast
One large egg or 2 already separated egg whites
1 T of your favorite salsa (here I used a homemade salsa)
2 T butter or olive oil
A sprinkle of Kosher salt
*Hot sauce dashes if you like to spice it up!

Directions:

-Lightly butter your bread on both sides. If using oil instead, skip this step.
-Cut a square shape with a small knife out of the center of your bread.
-Heat up a frying pan on medium/low heat.
-Add 1 T of butter or 2 T oil to the pan. Swirl it around to coat the bottom of the pan. It's important the egg won't stick to the pan.
-When pan is heated and coated with butter/oil, place your cut bread with the center removed into the pan.
-In the square hole of the bread, in the pan, add 1 T of salsa and stir a little, to gently warm it for about 30 seconds.
-Directly crack your egg over top of of pan, into the center of the square cut out. It'll settle over the warmed salsa. It's OK if it overflows over the top of the bread some.
-Sprinkle with Kosher salt, just a little pinch.
-Cook for 1 minute before even thinking of touching or flipping that bread. It's CRUCIAL to let the egg cook enough on the bottom so that you can flip the toast entirely. I usually let it cook for about 2 minutes.
-Use a large spatula to slide under the egg and toast and flip over. 
-Allow to cook for a minimum of 1 minute before turning off the heat. I like my eggs soft and not runny, so this is basically where you'll decide how cooked through you want your egg. 1-2 minutes on each side should completely cook the egg whites and leave a runny yolk. Personally I cook for 3 minutes on each side...but I'm strange with my egg textures.
*Enjoy with a dash of hot sauce,  a little extra salsa, or on it's own! Now I'm going to need to go make this. It's crave worthy for sure.

Extras:

   I have made this for a larger crowd (8) where I pre-heated an oven to 400 degrees, buttered all the bread on both sides, cut out squares, laid out on a lipped and greased baking sheet, placed each slice of bread evenly on the pan, put a T of salsa in each cut out, an egg in each cut out, and sprinkled all with salt. Then I baked for 10 minutes making sure the egg whites were all evenly cooked. Also, pretty simple.
