Deep Fried Door Stop AKA Beer Battered Fish

   Cue the Emperor's New Groove diner on all the fried foods, also my favorite animated movie. So this fish fry recipe is delicious and relatively easy. I can easily imagine Kronk running them out to me (my apologies if you don't get the Best Disney Animation Ever reference...but go watch it). They'll also bring you to a small, dark, hole in the wall, pub while you drown your sorrows and feed the hangry monster inside. To each their own on which place they take you, but either way it's a delicious one. They're obviously fried, so don't expect the health gurus in your life to not comment on the fact that they have grease (gasp). Anyways, they're fluffy and crisp on the outside. Just what you'd look for in a fish and chips place.

Ingredients:

1 lb of wild cod cut into smaller fingerling pieces (you'll see in my pics)
2 cups of self-rising flour
1 12 oz. bottle of the beer of your choosing
3 tsp of old bay seasoning
1 tsp garlic powder
1/2 tsp sea salt
1 tsp onion powder
1 tsp. ground black pepper
1 cup of buttermilk ranch dressing
Oil for frying approx. 1 cup, it should be an even half inch deep in the frying pan.  I've used just about every type of oil...my fave to fry with would be avocado oil but veggie oil works well too.
*Lemon slices and possibly hot sauce for garnishes.

Directions:

-Either while your fish is thawing, or an hour or two before, place your fish in a container and cover with ranch dressing. This takes out any extra fishiness as well as adding some flavor. You can do this over night and leave it covered in the fridge.
-Prepare breading mixture: In a large bowl, add in flour and seasoning. Don't add the beer till the last minute.
-Take out your fish and rinse off under cool water, pat dry, and then lightly dip into dry flour mixture.
-Heat oil in frying pan on medium heat.
-Beer time! Add in the entire bottle of beer and mix into to a thick batter. Because of the pre-flour dip by the fish, the batter will stick to the fish easier.
-Dip each piece of fish into the batter 1 or 2 at a time, using a fork to surround the fish with the batter. Immediately take fish out of batter and place into the frying pan with already heated, and rippling oil. *I usually add in the fish to the outsides of the pan first then circling into the middle. It's the hottest in the center and makes for evenly cooked fish when flipping.
-Cook fish for about 3-4 minutes on each side. It will puff up and you'll notice golden edges when it's time to flip. It should be golden brown on both sides before removing from the pan onto a wire rack or a plate with paper towels.

Serve with baked fries.
Also, it's great to serve with a sprinkle of a fresh lemon wedge or a dash of hot sauce. Hope you love it!
*Sometimes, if I have extra batter after the fish, I'll toss in some onion slices and fry them up too. The batter tastes equally great on onions and veggies!
