We eat pancakes a couple times a month. Throw an egg on top of one and you've got an easy dinner. I stopped buying a pre-mixed box a while ago and started experimenting with recipes of my own. This has become our favorite and my kids ask for them on the regular. The flavor is far from bland and they are nice and fluffy. Stack enough of them and you've got a nice pillow. Just kidding, but they are soft and not dense. It's really easy to interchange toppings and extra throw ins.

Ingredients:
2 cups of unbleached flour1/4 cup melted butter plus some extra butter for greasing your pan
2 eggs
1 1/2 cup of milk
3 T sugar
1/2 tsp salt
3/4 tsp baking soda
3/4 tsp baking powder
1 tsp Vanilla extract or 1/2 tsp almond extract (I typically go for the almond with the lemon zest)
1 tsp lemon zest (not necessarily required but makes them 10x better).
1/2 cup add-ins. Basically things like: chocolate chips, blueberries, pecans or anything you like in them.
Directions:
-In a large bowl add in all the dry ingredients.-Add in milk, eggs, and extract.
-Mix everything together well with a whisk or hand mixer.
-Add in melted butter and whisk.
-Add in lemon zest and mix together.
*Here you can choose to add in a topping 1/2 cup to the bowl, or you can leave them plain, or like I do personalize them. For example, I like blueberries with pecans and my kids only like plain or chocolate chip. You choose and you won't lose boo :)
-Cook them in a non-stick skillet with a little bit of butter or oil of choice on a low, medium heat. Flip once they start to bubble in the middle, then only cook for like 1 more minute. Hope they're comforting and delicious to you!
