There are a lot of dishes where I caramelize a bunch of sliced onions to top them off because I like my food to be extra. This salad is one such meal. My husband and I both gobble up this salad every time, and I'm not the biggest green salad eater (Gasp!).
Ingredients:
- 1 package of spinach,
- 1/4 cup dried cherries,
- 1/2 cuped seedless cucumber,
- 1/2 cup of feta cheese,
- 1/4 cup caramelized onions (1 large sauteed red onion ),
- Cracked black pepper,
- 1 diced tomato,
- You’re favorite vinaigrette dressing
-In a saute pan on medium heat put a little olive oil or butter and 1 whole thinly sliced red onion, cook for about 10-15min. stirring every once in a while so that it gets nice and soft and caramelized. I will just caramelize a couple of onions and save them in the fridge to pull out when needed, for toppings.
-In a large bowl mix spinach with the caramelized onions so that the oils from the onion cooking process, coat all of the leaves.
-Top the salad with the feta and the dried cherries.
-Toss on the diced tomatoes and cucumber pieces.
-Crack the black pepper over the top and finish with a sprinkle of your favorite vinaigrette dressing.
Yep, it's that simple and looks super fancy. It makes a great lunch for friends.
It also is a great sparkling side to a simple soup. My husband isn't a fan of just eating soup for dinner, unless its a souper (see what I did there?) hearty soup. So I like to add this salad on the side. Enjoy!
