Garlic, Rosemary, Sweet Potato Fries (Oven Baked)

Simple flavors that come together easily make me happy. I'm not sure if you have noticed in a couple of my other recipes, but garlic and rosemary go really well together, and I love to use them. There aren't that many ingredients in this recipe. Plus, the cleanup is not difficult. Those are all big wins to me. It's healthy and super delicious. They're also kid friendly if you needed another reason. I enjoy paring them with grilled dinners or BBQ. Let me know if you love them!  *Serves 4

Ingredients:

  • 2 very large or 4 regular sized sweet potatoes sliced into fries. I like them better with the skin on, but to each his own.
  • 2 chopped cloves of garlic
  • 3 T Ghee or olive oil
  • 2 sprigs of fresh rosemary chopped or 1 tsp dried rosemary. 
  • 1 T sea salt
  • 1 tsp black pepper

Directions:

  1. Pre-heat oven to 400 degrees F
  2. Line baking pan with parchment or aluminum foil.
  3. In a large bowl, add in all of the ingredients. Mix them together until it looks like all the ghee and seasonings are evenly coated on the sweet potatoes. 
  4. Pour entire contents of the bowl out onto the ready baking sheet and keep to one even layer. Try not overlap them or they wont be as crisp.
  5. Bake for 30-35 minutes. I don't typically flip mine half-way through the baking time, but you can do that if you want a more even crisp/coloring. I'm ok with it being crisper on the bottom. Plus it's easier for me to just leave them alone and check at 30 minutes. 
  6. Serve and enjoy!
