I like to buy a pork butt once a month and put it in the crock pot. #Aldiusa has pretty good pork butts that have a lot of marbling throughout that make for tasty pork. With that I either make a big batch of Mojo pork to use for a couple different meals, or I season it with smokey spices and BBQ sauce to have a bunch of pulled pork. Both ways make for some delicious easier meals. This is one! It comes together fairly quickly to boot. *Serves 2-4 depending on sweet potato size.
-1 cup of cooked shredded pork or chicken
-1/4 cup of your favorite BBQ sauce
-4 chopped green onions, half for adding into mix and half for sprinkling on top
-1 Jalapeno chopped (seeds and pith left out if you only want a mild heat)
-6 chopped mini-sweet peppers
-2 T chopped fresh cilantro
-A small bit of salt and pepper
-1 cup of shredded white cheddar cheese *Can be omitted if choosing no dairy.
Plate and enjoy with any extra toppings, sour cream, or just the perfect way that they are. They're great for Super Bowl parties as like a healthier nacho option. For that I'd just use smaller sweet potatoes and cut them in half after baking for more bite sized pieces.

-4 medium pre-cooked sweet potatoes sliced in half, and the majority of the middle scooped out. See picture below. Save the scooped out cook sweet potato to add into your stuffing mix if desired.-1 cup of cooked shredded pork or chicken

Directions:
- Pre-heat oven to 400
- In a bowl add in all your ingredients for stuffing the potato minus half the green onions and half the cheddar. These will later be added on top for toppings.
- Mix everything together well making sure there's enough sauce to lightly cover everything.
- Fill sweet potato skin boats with a few Tablespoons of the stuffing mixture to a little overflowing the top.
- Bake for 20 minutes or until you see light browning on top.
- Pre-heat oven to broil while removing pan.
- Remove from oven and top with remaining cheddar and green onions and i use a little extra sauce so that it sticks together better.
- Broil for 1 minute watching carefully. You should only be melting the cheese on top and lightly toasting them.
