Crispy Parmesan Baked Chicken

   The preparation for this chicken is extremely simple! It creates a crisp crust with moist chicken in a cheesy cream sauce. You'll love how easy it is, plus everyone adores it! The oven will have it smelling up your house like you've been cooking all afternoon. If you line the pan with aluminum foil like I did here, the clean up is a cinch. There's a gluten free option too. Enjoy! 

Ingredients:

  • 2 chicken breasts sliced in half right down the middle.
  • 1 cup of sour cream or plain Greek yogurt 
  • 1/2 cup of Parmesan cheese
  • 1/2 cup of Seasoned Panko Breadcrumbs (you can use the gluten free breadcrumbs here if you'd like)
  • 2 T of extra virgin olive oil
  • 1 tsp each of garlic powder, sea salt, crushed black pepper, Italian seasoning, and paprika. 

Directions:

  1. Pre-heat oven to 400 degrees F. 
  2. In a oven safe dish line with foil and grease if you wish. 
  3. Sprinkle a little olive oil on the bottom of the pan. 
  4. Season raw chicken evenly on both sides with the seasonings listed above.
  5. Place chicken in pan on top of olive oil. 
  6. Spread the sour cream or greek yogurt over top of the chicken in a smooth even layer. 
  7. Sprinkle the Parmesan over the top of the sour cream layer.
  8. Sprinkle the bread crumbs over top of the Parmesan. 
  9. Bake for 40 minutes. The internal temp of the chicken should be 165 degrees. The breadcrumbs should be a nice toasty golden brown. 
  10. Let the chicken rest out of the oven for 10 minutes before breaking into the layer. 
  11. I like to cut up the chicken and scoop up the sauce over top of it. 
*For a special garnish, top with a little chopped parsley. Serve over pasta, an arugula salad, or with roasted rosemary potatoes.
